Today’s great dish………….CARROT & PEA SOUP !
We are going to need ;
2tbsps Olive Oil, 175g Onions, chop finely, 1 Clove of Garlic, crushed, 1 Stock cube, 1Ib Carrots, diced,, finely chopped Mint and Thyme, 50g ground Almonds, 1I of Boiling Water, salt and pepper to taste, 450g frozen peas.
Heat the oil and fry the onions, add the garlic,cook a little and add the stock cube, stir in carrots and herbs, then cover and cook for 5 mins, add the almonds , remove the pan from the heat and slowly stir in water, return to heat, season and bring to boil, add the peas, cover and bring back to boil,and simmer for 5 mins.
Place in liquidizer/blender and blend until smooth, adding a little extra water or stock to achieve the desired consistency, this is a great way to get children to eat veggies and not even realise.
Most of us are passionate about something, that is why most of us our here in the blogosphere, however don’t forget that we can have more than one passion, it’s not unusual, and cooking is a wonderful passion, we can experiment and use our creativity, we can be adventurous and enjoy all the aromas of the food and vibrant colours. It is also very relaxing, if you allow it to be, take your time, and put your imagination into play, it is very rewarding and don’t forget you get to eat it as well………double pleasure !
